Weekend

Another Catch-up
I've been super busy with work but that doesn't mean there isn't enough time for fabric shopping :)
Pulled out all my Pyrex 501 refrigerator dishes, yum!
There has been time for a little sewing :)

Saturday
Did a little strawberry picking this morning! Unforunately the field was pretty picked over so we only got 1 quart. We're hoping next weekend we can get some more. They're a little tart but still so much better than store-bought!
Finally finished the top and backing for the Hope Valley Quilt. The top was done, but then there was a hiccup. When I was making the top I ran out of the beige fabric. I went to pick up some more but accidently got a very slightly different color. I didn't notice this until it was sewn together. So I had to go back and get the right color, rip out to two pieces that were wrong, and fix it. Gahh! I've done a lot of seam ripping on this quilt, but I think in the end it will be worth it. I'm pretty happy with the back as well. I'm basting it tonight here at home and than hopefully I'll start quilting it sometime this week. I'm still not sure how I want to quilt it.. :)
A little shopping today! Found some more of this fat quarter at Walmart and picked up some thread with my coupons! You can never have too much white thread!

Good Things about Today:
- Managed to have a productive day!
- Ran all the errands I needed to
- Finished up the quilt top and back
- Did all my laundry!

I am still getting used to working again. My internship is about 30 hours a week, so it's going to take some getting used to. Hopefully I can start to get into a good rhythm and start blogging more regularly again!

Weekend
Almost finished making hexagons! I'm started to get tired of making them so I may switch to connecting them for a while. I am loving the color combo.
Received my partner for the Doll Quilt Swap. Started sketching possible quilt ideas! I'm going to be pretty busy this summer with my internship so I know I need to get started right away so that I have plenty of time to make it. I'm going to sleep on my idea but I think I'm pretty excited about it! I also think I may do it double sided, piecing on both sides.
Made another batch of Red Velvet Cookies. They are my absolute weakness!

Easy Souffle Recipe
Easy Souffle
1 package (10 oz) Spinach (thawed & drained)
2 cups Lowfat Cottage Cheese
3 Eggs
3 T Flour
1 t Salt (only add if not adding ham steak)
1 c Cheddar Cheese (shredded)
1 small Onion (chopped)
2 T Butter (melted)
1 small Ham Steak (diced)
1. Preheat oven to 350 F.
2. Squeeze excess moisture out of thawed spinach.
3. Saute onions in butter until softened.
4. Mix all ingredients gently and spoon into 1.5 quart casserole
5. Bake for 1 hour, serves six.
Notes
*This recipe can be easily cut in thirds to feed two. It can be baked comfortably in one 502 Pyrex Refrigerator Dish or two 501 Pyrex Refrigerator Dishes.
*I don't like spinach at all and am not fond of onion. The recipe can easily be made without either.
